- Beginning after graduating from the Dunedin Art School in 1986, Gabby has been a practising and exhibiting artist since 1987, working around a full-time career in agency work as a project manager in London and Sydney.
- Gabby became a professional artist in 2019, concentrating on her art practise full time. Her work is an amalgamation of European and Chinese aesthetics and features anatomically detailed drawings of flora and fauna.
With Gabby’s unique background and heritage, she is challenging the European and colonialist genre of Chinoiserie with her own narrative as a Chinese adoptee raised in a white family in NZ. - A multi-award-winning artist in Australia Gabby has exhibited as a solo artist internationally in London, Shanghai, Hong Kong, Taiwan, Singapore and New Zealand. - In 2012 started collecting excess food from cafes, bakeries and other retailers in her car and personally delivering the food to frontline agencies feeding hungry people, which she did for some months.
- Received a local grant and with other fundraising bought a second hand van. She then engaged employees and a small warehouse facility was provided by the DCC.
- By the end of March 2015, KiwiHarvest provided 320,000 meal equivalents to 27 agencies in the Dunedin area.
- She then expanded to Auckland and by 31 March 2019 KiwiHarvest delivered more than 820,000 meals to food insecure people in Auckland and Dunedin.
- The North Shore and Queenstown branches followed.
- During 2019, Goodman Group increased their support and KiwiHarvest moved to a much bigger warehouse in East Tamaki. With the help of SBS, a new branch in Hawkes Bay was established. In 2019 KiwiHarvest Group sourced and delivered 2.985 million meal-equivalents for food insecure New Zealanders.
- In mid 2020 the New Zealand Food Network, funded by MSD and Kainga Ora was launched in a large new warehouse in Auckland and a smaller warehouse in Christchurch. In the period July 2020 to May 2021 the New Zealand Food Network sourced and delivered 7.841 million meal equivalents.
- Elected co-chair of Champions 12.3, a cross industry body tasked with helping NZ towards the UN Sustainable Development Goal 12.3 (by 2030 halve per capita global food waste at the retail and consumer levels and reduce food losses along production and supply chains, including post-harvest losses)

Fiona also co-chairs the national Clinicial Network of Child Development and Disability within the Paediatric Society of New Zealand, running regular free online CPD events.
- As part of her PhD study at the University of Queensland, Fi developed the Occupational Performance Coaching intervention, utilised by clinicians to assist individuals who live with disabilities to achieve the aspirations they have for themselves.
- OPC is used by multiple rehabilitation specialists, including occupational therapists internationally and has been the subject of several independently completed masters, PhDs and other independent research studies.
- OPC consultancy training has been delivered across Australasia, Europe and Canada, and since 2020, via Zoom and asynchrronous format. In total over 50 workshops have been delivered to over 2000 clinicians. A growing team of over 10 clinicians and academics now independently train others in OPC
- OPC intervention has been included in key occupational therapy textbooks as well as Fi publishing her own manual to support the educational needs of health practitioners
- In 2018 Won a Health Research Council grant of $330,000 to conduct a randomised controlled trial of OPC in the NZ service delivery context.
- In 2018 Fi was invited to deliver the Sadie Philcox memorial lecture at the University of Queensland.
- Fi has published 46 peer reviewed publications, one book and multiple book chapters, including several for undergraduate occupational therapy edited textbooks.
- To date Fi has supervised 30 masters and PhD students over the past 12 years.
